Cioppino
Simmering cioppino featuring flash seared sea scallops, prawn and white anchovy scented with mixed herb coulis and garnished with a crunchy black pepper tuile.

Seared Baramundi
Fresh Australian Barramundi pan seared in olive oil, served over rich tomato saffron emulsion and aromatic basil spaghetti, topped with sweet, beet roe.

Ostrich Burger
3 oz New Zealand ostrich burger marinated with soy and ginger, grilled and stacked with avocado, house cured pancetta, tomato, papaya salad, dressed with mango mayonnaise, Dijon mustard and served with house cut shoestring French fries.

Grass-fed Filet Mignon
100% Australian raised grass fed beef, crusted with pink peppercorn, torch brûléed over aromatic cedar, served with horseradish cream and blended microgreens.

Mango Pistachio Truffle
Rich chocolate truffle accented with mango, grand mariner, pistachio and mint and graham cracker.
